Zojirushi’s Umami® Micom Rice Cooker and Warmer comes with the Umami setting, exclusive to the brand, that soaks and steams the rice longer for exquisite flavor. This model also presents the user with a Slow Cook function that allows it to work like a slow cooker.
Umami as the 5th dimension of taste
Following the basic tastes sweet, salty, sour and bitter, Umami (originating from the Japanese word for deliciousness) is believed to be the complimenting 5th basic flavour. The science behind the Zojirushi Umami technology is the idea that the starch within rice is changed from beta starch to alpha starch making the rice sweet, fluffy and soft. This function maintains the ideal temperature during the extended soaking phase, wherein the rice slowly releases its sugar into the water. When this process is over, and the heating begins, the sugar that was released into the water reattaches itself onto the surface of the rice, thus adding sweetness to the taste. As a result, this league-of-its-own model of rice cooker transforms the rice you cook from the occasional side dish to a sophisticated meal your palate will appreciate.
Other key features of YAC10/18 include the Micro Computerized Fuzzy Logic Technology (Micom) that enhances the way the cooker thinks and works. This aspect of the cooker eases its use by adjusting cooking times and temperatures according to the type of rice you are cooking and timing the pre-soaking of the raw grains and the final ‘wait’ period during steaming, leaving very little work for the user.
